We’ve all seen gingerbread cookies, but why not try something different this year and make gingerbread cupcakes?
These spicy little cupcakes are absolutely amazing when combined with a cinnamon cream cheese frosting. With that distinct holiday flavor, these are certain to be a hit at any holiday gathering.

Gingerbread Cupcakes with Cream Cheese Icing
Doctoring a box of yellow cake mix makes this a super simple recipe that you can whip out during holiday baking time. Give these to your coworkers, friends or neighbors as a special treat and they will be super impressed!

Gingerbread Cupcakes with Cream Cheese Icing
Ingredients
- 1 box of yellow cake mix
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon ground ginger
- 2 eggs
- 1/3 cup light brown sugar
- 1/3 cup molasses
- 1 stick of melted butter
- 1 cup water
Cream Cheese Frosting Ingredients:
- 2 sticks room temperature unsalted butter
- 4 cups confectioners’ sugar
- 1/2 cup room temperature cream cheese
- 1/4 cup half and half
- 1 teaspoon cinnamon
Instructions
- Preheat oven to 350 degrees.
- Line a 12-cup muffin pan with baking liners.
- In a mixing bowl, add cake mix, baking soda, salt, cinnamon, nutmeg, and ginger. Whisk dry ingredients together.
- In a mixing bowl, whisk together the eggs, brown sugar, molasses and butter for 1-2 minutes.
- Slowly add the dry ingredients to the mixing bowl, whisking on medium until combined.
- Add the water and mix on medium speed for 2 minutes.
- Fill each muffin cup 2/3 of the way with batter.
- Bake 18-20 minutes or until it springs back when touched. Let cool completely before icing.
To Make Cinnamon Cream Cheese Frosting:
- Beat cream cheese and butter for 1 minute or until creamy. Add cinnamon and incorporate completely.
- Add half of the creamer and slowly add in the confectioners’ sugar, 1/2 cup at a time until light and fluffy. If the mixture is too thick, add more creamer, 1 tablespoon at a time.
- Place frosting in piping bag or spread with a spatula to frost cupcakes
